Ajinomoto ist der weltbekannte Pionier hinter MSG (Mononatriumglutamat), das 1908 vom japanischen Chemiker Kikunae Ikeda entdeckt wurde – als Quelle des fünften Geschmacks: Umami. Die Produktion erfolgt heute über Fermentation pflanzlicher Rohstoffe wie Zuckerrohr, Zuckerbete oder Mais . Ajinomoto vermarktet MSG als „Umami Seasoning“, das Speisen aromatischer macht und gleichzeitig weniger Natrium als normales Salz enthält
